To make Gujarati food handvo, first of all, rice, urad dal, chana dal, and toor dal should be cleaned. Wash it thoroughly with water at least two to three times. When it is thoroughly cleaned, then put it in a clean utensil and keep it soaked. After soaking it for about 4 hours, drain its excess water and put it all in a mixer jar. Now add curd to it and blend it to make a smooth and thick paste. Pour the prepared batter in a big bowl. After pouring the batter in a bowl, keep it covered overnight so that it can ferment properly. Now to make it, add green chilies, red chili powder, turmeric, ginger paste, sugar, and salt to the batter and mix well.

Now put some oil in a pan and heat it on medium flame. After the oil is hot, add cumin seeds, mustard seeds, asafoetida, curry leaves, sesame seeds and temper it. Now put one and a half cup handvo batter in it and spread it evenly. After that cover the pan and cook till the upper layer of handvo becomes dry. After this, bake the eggs well.
